Trader Joe’s Cheese Pizza with an Arugula Salad Served Right on Top

Some nights it’s just not possible to come up with a recipe and cook a bigger dinner. Tonight is going to be one of those nights for me. Dennis and I are heading to the Goo Goo Dolls and Phillip Phillips concert tonight at the SDSU Open Air Theater. When Dennis asked me what I’d like to do for our anniversary this year, I told him I’d love more than anything to see Phillip Phillips since he was going to be in town the following week.

Instead of coming up with a new recipe to share with you all, tonight I thought I’d share with you something I enjoy having for dinner when time is short. I enjoy Trader Joe’s frozen cheese pizza because it is lower in calories and fat than other frozen pizzas. To dress it up a bit, I like to throw a couple handfuls of arugula on top of the pizza and drizzle it with a bit of olive oil and a squeeze of lemon juice, kosher salt and pepper and shredded parmesan cheese. It’s like having an arugula salad with a pizza bottom, it’s good and it doesn’t feel heavy.

I love that I can enjoy a nice dinner for under 400 calories! This pizza has just 310 calories per serving (the pizza serves 3, which means there will be leftovers for Dennis’ lunch for tomorrow … it’s a win-win!), and just 4.5 saturated fat grams, no trans fat. I can feel good about eating this pizza without any real guilt (also a win-win!).

This is what the pizza looks like baked with the arugula salad added on top. With a nice glass of red wine, this is an ideal dinner for me. I will feel like I’m sitting at an outdoor restaurant in Italy.

I’ve seen Phillip Phillips with my good friend, Marie a couple times, and Marie and Ethel once. He is so amazing in concert … my absolute favorite to watch on stage. It is so much fun to watch him play his guitar! I was hoping Dennis would want to go to this concert with me so he can appreciate Phillip Phillips in the same way I do. Dennis really enjoys The Goo Goo Dolls, who happen to be the opening act … I know we are going to have a fabulous time tonight. I can’t wait! Now, I just need to search my closet for the perfect outfit.
