Ingredients
2 flour tortillas
3-4 figs, pit removed, chopped
2 slices cooked bacon
1/2 cup shredded gruyere cheese
2 tablespoons apricot jam
1/2 jalapeño, diced, seeds removed
Directions
- Cook bacon.
- Remove and toss pits from dates. Chop dates.
- Drizzle olive oil into a large skillet.
- Spread 1 tablespoon apricot jam on each tortilla.
- Sprinkle cheese on bottom tortilla.
- Add bacon, jalapeño and dates.
- Put top tortilla on.
- Cook for 3-4 minutes per side (over medium heat) until the tortilla starts to become brown and crispy.
