Bacon, Date, Apricot and Gruyere Quesadilla



2 flour tortillas

3-4 figs, pit removed, chopped

2 slices cooked bacon

1/2 cup shredded gruyere cheese

2 tablespoons apricot jam

1/2 jalapeño, diced, seeds removed


  1. Cook bacon.
  2. Remove and toss pits from dates. Chop dates.
  3. Drizzle olive oil into a large skillet.
  4. Spread 1 tablespoon apricot jam on each tortilla.
  5. Sprinkle cheese on bottom tortilla.
  6. Add bacon, jalapeño and dates.
  7. Put top tortilla on.
  8. Cook for 3-4 minutes per side (over medium heat) until the tortilla starts to become brown and crispy.
