Cranberry, Date, and Lemon Chicken in White Wine and Dijon

Ingredients

  • 10 CHICKEN DRUMSTICKS
  • 1 TBSP. OLIVE OIL
  • 1/2 TEASPOON KOSHER SALT
  • 1/4 TEASPOON PEPPER
  • 1/4 TEASPOON GARLIC POWDER
  • 1/4 CUP HONEY
  • 1 TABLESPOON HOISIN SAUCE
  • 1/2 TEASPOON MINCED GARLIC (FROM THE JAR)
  • 1/2 TEASPOON GROUND MUSTARD
  • 1/8 TEASPOON CRUSHED RED PEPPER FLAKES

Directions

Preheat oven to 375 degrees. Place chicken on a sheet pan and pat dry with a paper towel. Brush the chicken with olive oil and sprinkle with salt, pepper and garlic powder. Place in the oven for 30 minutes. After 30 minutes, pull the chicken out and turn drumsticks over. Place them back in the oven for 15 minutes.

In a large measuring cup, whisk together honey, hoisin sauce, zest and juice of lime, minced garlic, ground mustard and red pepper flakes.

Brush drumsticks with sauce and place back in the oven for the last 15 minutes of cooking time.
