Roasted Red Pepper, Avacado and Goat Cheese Toast

Welcome to my lunch time!  This is what I enjoy for lunch most days of the week, so thought I would share it with all of you.  It is very satisfying and nice when I don’t feel like a meat sandwich.  Avocados are so healthy, I love this simple, light and healthy meal.  I hope you will too!  I love to read up about healthy eating and I often look at websites to tell me which foods I should be including in my daily diet.  Many of the sites I looked at said it is a great idea to eat an avocado a day.  This is when I concocted this sandwich.  I was determined … I was going to eat an avocado every day.  I don’t actually eat an avocado every day like I’d like to.  But try to several days a week.

This is the easiest lunch to make.  I am a big fan of Trader Joe’s Rustica bread.  I toast two pieces of this bread and top it with the following:  Roasted Red Pepper, topped by a half an avocado and then I crumble goat cheese over that.  I love to drizzle a bit of balsamic vinegar over that and then top with a little arugula. Not everyone loves arugula, and if you are one of those that doesn’t, feel free to top it with any greens you like.  Sometimes, I like the micro greens sprinkled on top.   A little kosher salt (or sea salt is good as well) and fresh ground pepper go a long way on this toast.  It adds just the right seasoning.  I like this sandwich to be simple.  This lunch is quite satisfying, but also very light.  It doesn’t make me feel too full, which I appreciate.
