BLTA Sandwich

I bet you all thought the “A” at the end of my BLT stood for Avocado.  Most times, when I make a BLT, that is true.  Tonight, however, I decided I wanted a sliced apple in my BLT.  I also used mini heirloom tomatoes instead of a beefsteak tomato.  I toasted my bread, spread each half with light mayo, sprinkled pepper and dried French thyme on top of the mayo and started building my sandwich. I also sprinkled a little more thyme on the apple slices.

I think this sandwich looks like the perfect summer supper sandwich.  To me, it looks just like I picked the tomatoes out of the garden, pure summer perfection.
