Last night’s dinner had to be easy, tasty and somewhat quick. It was the Championship game for Dennis’ Thursday night softball league. The Fast & Furious had a great season and they were headed to the Championship game. They came in 2nd, way to go guys!!! After a six week break, they’ll start up again.
For dinner, the athlete was requesting a quesadilla before the big game. I decided to use the corn and wheat tortillas last night. I used some plain chicken breast that had already been roasted. I cut it into strips and sautéed it in some olive oil, chili lime rub, kosher salt, lime zest and the juice of one lime.
I shredded Colby jack cheese and placed some on the bottom tortilla. I added diced scallions, diced jalapeños (seeds and membrane removed), cowboy caviar that I bought already prepared from Trader Joe’s. You can find this in the aisle with their jarred salsas. I then topped this with a few strips of the chicken and a bit more shredded cheese and cooked it in a skillet with just enough olive oil to brown the tortilla. I topped the tortilla with light sour cream, chopped cilantro, diced jalapenos, and diced scallions.
For the corn on the cob, I whipped together a chli lime butter using the same chipotle lime seasoning I used on the chicken, and sea salt. We just smeared this butter on the corn and sprinkled cilantro and a little more chili lime seasoning on the corn and that was it. Simple, yet yummy!
