Quesadillas with a side of Chili Lime Butter Corn on the Cob


Last night’s dinner had to be easy, tasty and somewhat quick.  It was the Championship game for Dennis’ Thursday night softball league. The Fast & Furious had a great season and they were headed to the Championship game.  They came in 2nd, way to go guys!!!  After a six week break, they’ll start up again.

For dinner, the athlete was requesting a quesadilla before the big game. I decided to use the corn and wheat tortillas last night.  I used some plain chicken breast that had already been roasted.  I cut it into strips and sautéed it in some olive oil, chili lime rub, kosher salt, lime zest and the juice of one lime.

I shredded Colby jack cheese and placed some on the bottom tortilla. I added diced scallions, diced jalapeños (seeds and membrane removed), cowboy caviar that I bought already prepared from Trader Joe’s. You can find this in the aisle with their jarred salsas. I then topped this with a few strips of the chicken and a bit more shredded cheese and cooked it in a skillet with just enough olive oil to brown the tortilla. I topped the tortilla with light sour cream, chopped cilantro, diced jalapenos, and diced scallions.


For the corn on the cob, I whipped together a chli lime butter using the same chipotle lime seasoning I used on the chicken, and sea salt.  We just smeared this butter on the corn and sprinkled cilantro and a little more chili lime seasoning on the corn and that was it. Simple, yet yummy!

I love when my house is filled with people, having friends and family over for a meal feeds my soul. There is nothing I enjoy more than preparing for a dinner party, a holiday dinner, or a book club meeting when it's my turn to host ... If I could, I would own a Bed and Breakfast! This would ensure I'd always have someone to prepare a meal for. Being with others and sharing my table is what I look forward to most. I was born in Wisconsin and after I got married in 1987, my husband and I moved west for his job. He had just graduated college and we were married a couple months later. An interesting tidbit about me is that I never cooked a meal before I got married. I taught myself how to cook and found that I really enjoyed it. One of the first meals I made after we were married was a shrimp pasta dish. I made this for myself when my husband was on business travel and I had so much fun inventing this meal - this was the start of my love of cooking. I probably won't be posting much on shrimp dishes, since I am now allergic. Big bummer! I was allergic to lobster, and then had an issue with scallops, so just never had a shrimp after the scallop incident. Why couldn't I be allergic to something less enjoyable?!
