Simple Sunday … those are the best in my mind. My husband and I can be found at our local bagel shop most mornings of the week for our daily bagel and coffee. Well, coffee for me … Diet Coke for Dennis. This morning, I wanted to take Remington for a nice Sunday walk (more on our walk in just a bit), so I wanted to have breakfast at home. Here in San Diego, we get the nice marine layer many mornings. I absolutely love this about San Diego. I always say my coffee tastes best with a morning marine layer.
I decided to whip together an egg sandwich with turkey bacon and low fat white cheddar. My own little version of the “Egg McMuffin”. I put this on a whole wheat (8 grams of fiber!) bagel and served it with a side of strawberries, an 8 ounce glass of Trop 50 (less sugar and calories) orange juice and that cup of coffee I love so much. A nice little breakfast to get me going before heading out with my best furry friend.
Remington and I had so much fun exploring (him) on our walk this morning. He was very busy watching the couple in the park doing sprints and lunges. I’m sure Remington was wishing he was sprinting with this man because he loves to run so much. Well, since he was with me and not my husband, we were walking. I’m not a runner, but could walk for miles. Rumor has it that I’ll be signing up for the Carlsbad Half Marathon again with my sister this coming January. My sister, Cherie – she’s a runner. My husband, Dennis – he’s a runner. I wish I could say I was a runner, but it will never happen. I don’t want the world to go by too fast. I’ll stick to walking. After about a mile walking around the small park in our neighborhood, I headed up the hills (best to wear out Remington for the day) to the next park. Wouldn’t you know it, we were confronted with the same dog that “chased” us down the other day on our walk. Oh no! Not this again. I was not happy, but made my way and continued up the hill. I wasn’t going to let a dog chasing us stop my walk from happening. He gave up on us and Remington and I continued on our merry way. I didn’t want to run into the other dog on the way home, so called my daughter, Kylie, and asked her if she could come pick Remy and I up at the Ocean Air Park so we didn’t have to run into our new friend on the way home again. “Sure Mom, let me just put on my Birkenstocks and I’ll be on my way.” I said “Great, I’ll just do more laps while I’m waiting for you”. My savior, Kylie, showed up in her Mickey Mouse boxer shorts, Justin Bieber concert t-shirt, and her Birkenstocks that she can’t live without. I’m surprised she didn’t throw on her fluffy and furry white Restoration Hardware slippers that she keeps under her bed. (Those slippers are the best and softest slippers ever, I highly recommend them. If you want a pair, they always come out during the holiday season. Give them a try, you’ll be glad you did!). I told Kylie, “You could have gotten dressed first”, but she must have thought I needed help asap. Looking back at Kylie’s look this morning, I have to laugh out loud. She’s adorable. I should have taken her picture.
Here’s how I made my breakfast sandwich.
Ingredients

1 whole grain Thomas brand bagel

2 slices turkey bacon, cooked

1 egg, cooked over hard

reduced fat white cheddar cheese, 1 slice

olive oil non-stick spray

sea salt
-
fresh ground pepper
Directions
Toast your bagel (or don’t, up to you). Cook egg in a small pan in non-stick spray, sprinkling with a small amount of salt and pepper. Flip half way through and continue to cook until the yolk is no longer runny. You can cook this over easy if you don’t mind a runny yolk in your sandwich. Cook turkey bacon (I cooked mine in the microwave for 3 and a half minutes). Butter your toasted bagel place your egg on the bottom half, top with the slice of cheese and then the turkey bacon. Put the “lid” on your sandwich, cut in half and enjoy.
