Lox and cream cheese on a bagel is my all-time favorite breakfast. I get it every year on my birthday. While grocery shopping at Trader Joe’s on Sunday, I was going to get a package of lox when I saw they had a new item, Smoked Salmon Bacon.
I thought I’d give it a try and see how I liked it on my bagel. Well, let me tell you, it was great, so tasty! Breakfast this morning was super satisfying. A perfect send off for my walk with Remington.
Ingredients

1 whole wheat bagel

2 slices smoked salmon bacon

2 slices tomato

2 slices red onion

2 tablespoons reduced fat cream cheese

1/2 tablespoon olive oil

sea salt

fresh ground pepper
Directions
Toast your bagel. Cook salmon bacon in a sauté pan in a very small amount of olive oil for two minutes on the first side and one minute on the second. Top bagel with cream cheese, one tablespoon per side. Lay tomato and onion slices on top of cream cheese. Sprinkle sea salt and fresh ground pepper over tomato and onion and top with smoked salmon bacon. Enjoy!
