Couscous with Roasted Cherry Tomatoes and Parmesan Shavings

Today, when I opened the refrigerator, a dish of leftover couscous and another dish of leftover roasted cherry tomatoes were staring back at me. I decided to put them together in a bowl, reheat it and that would become lunch. Sometimes, I just don’t feel like a sandwich, and today was one of those days.

I pulled the couscous and tomatoes out of the fridge, along with a wedge of parmesan cheese. I reheated the couscous and tomatoes in the microwave for just a couple minutes and served it with fresh shaved parmesan. It was wonderful. A simple lunch … a simple lunch that could also be made more elegant by adding a salad and a nice glass of chardonnay … and of course, a few friends.

This post really doesn’t call for a recipe. It’s just a simple bowl of combined leftovers that turned out to be quite a lovely lunch.
