Today, I made a healthy lunch that consisted of nothing more than two slices of Rustica bread from Trader Joe’s that I toasted, an avocado, two tablespoons of sun-dried tomatoes and two tablespoons of goat cheese. There were no added seasonings, no sauces, just fresh ground pepper. The only “sauce” that made it onto my sandwich was some of the olive oil from the sun-dried tomatoes.
My goal this year was to eat an avocado a day if I could. Sometimes, I find it’s easiest to eat my avocado at lunch on toast. I can’t do this everyday, sometimes I’m out and about, or I run out of avocados, or I just feel like something different. I know that avocados are so healthy for our hearts though, so want to eat one as often as I can.
A little over a year ago, I added almonds to my daily routine. Around 4:00 each day, I sit down to a quarter cup of almonds and an apple. I am determined to be the healthiest I can be for the rest of my life. I turned 50 two years ago, and I am healthier now, and weigh less, than when I was at 35. I came to the realization that when you are focused more on good health and not just fitting into the perfect outfit for an occasion, you end up looking better and feeling better and it’s easier to reach those goals when it’s good health you are focused on, not vanity.
It’s more important to me to live a full, healthy life than anything else. Today, I started my day with a 5-1/4 mile walk with my furry Valentine, Remington.
I toasted my bread and stacked it with the avocado first (half an avocado on each piece of bread), then the sun-dried tomatoes ( 1 tablespoon per toast) and last but not least, goat cheese (1 tablespoon per toast).
I feel that this post doesn’t really need the recipe, it was so easy.

I love avacado on toast too Kris. I smash mine up with some lime juice and add a little pepper. Sometime I put a little tuna or egg salad on it but there are many ways to dress up this simple but healthy and delicious meal. Yay for the avocado xox JJ

I love tuna as well! Sometimes I do put tuna on the sandwich with my avocado, it’s so good! I’ll try egg salad soon too :). XOXO
