Tonight, we wanted a quick and light dinner. I chose to make BLT’s, but wanted to fancy them up a bit.
I made a spread for my BLT that would be more than just mayo. I mixed a couple tablespoons reduced fat mayonnaise with 1 tablespoon dijon mustard, minced garlic, kosher salt, pepper, and Italian seasoning.
Once I toasted my cracked wheat sourdough bread, I spread each slice with the dijon/mayo mixture.
Once my spread was on each slice of bread, I layered my sandwich with heirloom tomatoes and arugula.
After the arugula was placed on top of the tomatoes, I placed two wedges of brie cheese and turkey bacon. I then introduced the top half of my sandwich to the bottom, cut it in half and enjoyed a healthy dinner that didn’t take long at all to make.
Ingredients

2 slices cracked wheat sourdough, or bread of your choice

3 slices turkey bacon

heirloom tomato slices

2 wedges of brie cheese

Directions
- Mix together mayonnaise, dijon, minced garlic, Italian seasoning, kosher salt, and pepper.
- Cook turkey bacon.
- Toast bread.
- Spread mayo mixture on each slice of bread.
- Layer with tomato, arugula, brie cheese, and turkey bacon.
- Slice in half and enjoy.
