I came across this recipe this morning and thought I would share it again. It’s such a beautiful salad and so very tasty. I was thinking about another salad to make when this one popped up.
I hope you don’t mind me sharing it again! This recipe was actually posted last October, it seems like yesterday.
Ingredients

1 bag of arugula

1 package of prosciutto

1 container burrata cheese

1 lemon (juice of … 2 tablespoons)

1/8 cup dijon mustard

1/2 cup olive oil

2 cloves garlic
-
kosher salt
-
fresh ground pepper
Directions
Place arugula salad on a large platter. Whisk together lemon juice, dijon mustard, olive oil, kosher salt and pepper and minced garlic. Pour lightly over arugula. Lay prosciutto over salad and cut burrata pieces into four pieces each and lay over salad. Sprinkle burrata with kosher salt and pepper. Serve and enjoy!

I make mine similarly just with a splash of aceto balsamico, delicious!

That sounds fabulous! I was just thinking of a recipe I could do for a salad with a pomegranate balsamic. I’m going to try that one next week. :).
