Italian Chicken Sausage and Leek Pizza


Kylie was going to be out with a friend for dinner tonight and when I asked Dennis what he’d like for dinner since it was just the two of us, he replied with “homemade pizza!”.

Dennis and I went to a movie this afternoon and while enjoying the movie, the idea of leeks popped into my head. After the movie we headed to the market to pick up the items we’d need for our pizza. We bought a package of Italian chicken sausages, a package of leeks, a fresh pizza dough, pizza sauce and low fat/low calorie mozarella cheese (feel free to use regular mozarella cheese for your pizza if you prefer).

I’d never cooked with leeks or used them before. I don’t know why, I just haven’t. Now that I’ve cooked with them, I know I’ll be using them quite often. I knew they were part of the onion family and that they are milder than an onion. Dennis doesn’t love onions and I do. I thought using leeks on a pizza would be a way to satisfy both of us. It worked, he loved the pizza!

I laid my dough onto a bread board with a little flour, to keep it from sticking. While the dough was rising, Dennis put the chicken sausages into the oven to bake. He put them in a preheated 375 degree oven for 30 minutes. Once the dough had risen (20 minutes per the package directions), I stretched it and formed it onto my pizza pan. I drizzled a small amount of olive oil onto the unbaked crust and sprinkled a pinch of kosher salt over the crust as well. I placed my crust into a preheated 450 degree oven for 8 minutes. The crust turns out a little crisper when I do this.


While the crust was baking, I sliced my leeks and cut my cooked sausages and set them aside.


Once the crust was done with the initial baking, I pulled it out of the oven. I then spread the pizza sauce over the crust. On top of the sauce, I added the cheese. I chose to use a low fat/low calorie mozarella. You can definitely use regular mozarella cheese. I prefer the lower fat and lower calorie in general, so that is what I use. I also like to add a sprinkling of grated parmesan to my pizza.

I laid the sausages and leeks onto the pizza and sprinkled a bit of pizza seasoning over the cheese. Feel free to use Italian seasoning if that is all you have.


I placed my pizza back in the oven for another 15 minutes.


Dennis and I enjoyed the simplicity of this pizza. It was simple, yet satisfying. He has packed up his lunches for the next two days with the lefovers … I know Dennis will be having a lunch he enjoys tomorrow.


1 fresh pizza dough

flour (for the board)

drizzle of olive oil

pinch of koshser salt

1 teaspoon of pizza seasoning

3 cooked Italian chicken sausages

mozarella cheese (as much or as little as you like)

1/8 cup grated parmesan

1/2 leek, sliced

pizza sauce of your choice (as much or as little as you like)


  1. Set dough out on bread board to rise (per package directions).
  2. Preheat oven to 375 degrees.
  3. Bake sausages for 25-30 minutes.
  4. Stretch dough to fit pizza pan.
  5. Drizzle dough with olive oil and a sprinkling of kosher salt.
  6. Pull chicken sausages out of oven and increase oven temperature to 450 degrees.
  7. Bake crust for 8-10 minutes.
  8. Slice cooked sausages.
  9. Remove crust from oven.
  10. Spread pizza sauce over crust.
  11. Sprinkle mozarella cheese onto pizza. Add grated parmesan.
  12. Add sausages and leeks to pizza.
  13. Sprinkle with pizza seasoning.
  14. Bake additional 10-15 minutes, until cheese is melted and starting to brown.
