Sometimes a forgotten, old favorite is a good choice. That’s how I felt as I was preparing my salad to go with our Gnocchi we were going to be having for dinner tonight. As I was pulling the ingredients for my salad out of the refrigerator, I stopped at just the cucumber, tomato and red onion.
My Mom used to make a version of this when I was growing up. I think this salad is about as close to clean eating as you can get. It’s nothing more than a cucumber or two, a couple tomatoes, and half a red onion. Kosher salt, fresh ground pepper and dried basil were all it needed … no salad dressing on this one. However, if you wanted to add Italian dressing, you certainly could. The good thing about not using dressing is that Dennis can pack it up to go with his lunch tomorrow without any worry of it wilting.
This took no time at all, less than 5 minutes. The best thing of all, it was so healthy.
Ingredients
2 cucumbers
3 tomatoes
1/2 red onion
1/3 teaspoon kosher salt
fresh ground pepper
1 teaspoon dried basil
Directions
- Peel cucumber and remove seeds with a spoon. Slice into half rounds.
- Cut tomatoes into eighths.
- Dice onion.
- Place all in a bowl. Sprinkle salt, pepper, and basil over vegetables. Stir.
