Cucumber, Tomato and Red Onion Salad

Sometimes a forgotten, old favorite is a good choice. That’s how I felt as I was preparing my salad to go with our Gnocchi we were going to be having for dinner tonight. As I was pulling the ingredients for my salad out of the refrigerator, I stopped at just the cucumber, tomato and red onion.

My Mom used to make a version of this when I was growing up. I think this salad is about as close to clean eating as you can get. It’s nothing more than a cucumber or two, a couple tomatoes, and half a red onion. Kosher salt, fresh ground pepper and dried basil were all it needed … no salad dressing on this one. However, if you wanted to add Italian dressing, you certainly could. The good thing about not using dressing is that Dennis can pack it up to go with his lunch tomorrow without any worry of it wilting.

This took no time at all, less than 5 minutes. The best thing of all, it was so healthy.

Ingredients

2 cucumbers

3 tomatoes

1/2 red onion

1/3 teaspoon kosher salt

fresh ground pepper

1 teaspoon dried basil

Directions

  1. Peel cucumber and remove seeds with a spoon. Slice into half rounds.
  2. Cut tomatoes into eighths.
  3. Dice onion.
  4. Place all in a bowl. Sprinkle salt, pepper, and basil over vegetables. Stir.

I love when my house is filled with people, having friends and family over for a meal feeds my soul. There is nothing I enjoy more than preparing for a dinner party, a holiday dinner, or a book club meeting when it's my turn to host ... If I could, I would own a Bed and Breakfast! An interesting tidbit about me is that I never cooked a meal before I got married. I taught myself how to cook and found that I really enjoyed it. One of the first meals I made after we were married was a shrimp pasta dish. I made this for myself when my husband was on business travel and I had so much fun inventing this meal - this was the start of my love of cooking. I probably won't be posting much on shrimp dishes, since I am now allergic. Big bummer! I was allergic to lobster, and then had an issue with scallops, so just never had a shrimp after the scallop incident. Why couldn't I be allergic to something less enjoyable?!
