Healthy Egg and Arugula Open Face Breakfast Sandwich

As I was making my husband his egg sandwich to go this morning, I thought about what I’d want for breakfast. Usually it’s eggs with turkey bacon and either toast or a Trader Joe’s bagel (on the days we aren’t at Einstein’s for our usual bagel breakfast).

As I was pulling the eggs out, I saw a big container of arugula I bought so decided to use that with my breakfast this morning. I ended up making an open-faced egg and turkey bacon sandwich, served on whole-grain bread mounded with arugula.

I really loved the way the arugula tasted under my eggs! This may be a new go-to breakfast for me.


Dennis came downstairs and saw what I had made for myself. He took one look at what I’d made myself and told me that this was the perfect clean eating power breakfast, based on an article he’d just read in an email from My Fitness Pal that talked about clean eating power breakfasts that fuel you all morning. I was happy to hear this, since I hadn’t seen the article.

2 eggs

2 slices whole grain bread

2 slices turkey bacon

handful of arugula

salt and pepper


  1. Toast the bread.
  2. Cook eggs sunny side up in non-stick cooking spray. Cook turkey bacon in microwave (or stove top, or oven .. whichever method you prefer).
  3. If you’d like, add a small amount of Smart Balance Margarine to your bread. Top with arugula, egg and turkey bacon.
