After a busy week, Dennis and I decided to just hang out at home tonight and enjoy a movie. I figured I’d pop some popcorn and we would just kick back and enjoy our home on this Friday night.
I popped one cup of popcorn kernels in two tablespoons of olive oil in a large kettle on the stove. Once the popcorn was done, I poured it into a big wooden bowl.
I then drizzled a little olive oil over the top. I wanted to use olive oil instead of butter, especially knowing how healthy olive oil is for us. I’ve heard you get the most benefits from olive oil when you eat it without cooking it.
Once the olive oil had been drizzled on our popcorn, I sprinkled 2 tablespoons of grated parmesan cheese over the top, and sprinkled a teaspoon of black truffle salt and a few grinds of the pepper mill.
I don’t know about you, but popcorn has always been one of my favorite snacks. I grew up with my mom making us homemade popcorn on the stove and that’s just the way I like to make it too.
Ingredients
1 cup popcorn kernels
2 tablespoons olive oil
1 teaspoon black truffle salt
a few grinds of the pepper mill
1 tablespoon grated parmesan
Directions
- Heat oil in kettle on stove. Add kernels and place lid on kettle. Cook popcorn on high until popping slows.
- Pour popped kernels into a large bowl and drizzle with olive oil, truffle salt, freshly ground pepper and parmesan. Mix together.
