Happy Cinco de Mayo, Everyone! This year Cinco de Mayo will be celebrated a little differently for most since we can’t go out to a Mexican Restaurant to enjoy our favorite Cinco de Mayo meals and appetizers. I wanted to share with you one of my guacamole recipes that you can make and enjoy in the comfort of your own home, while you are sheltering in place with your loved ones.

This recipe is always a hit when I make it for family and friends. My good friend’s son even asked her for it while away at college because he was going to be making it for his fraternity for a party! That was one of the moments in my life that put the biggest smile on my face, no lie. I was thrilled that Tommy thought enough of my guac recipe to make it for his friends. This is when I knew I had a real winner with this recipe!

I hope if you make this recipe that you enjoy it as much as we all do and as much as Tommy’s fraternity brothers did.

First, I cut the avocados in half, removing the seed and removing the avocado from the shell. Set the seed aside, I have a purpose for that which I will share with you. Place the avocados into a large bowl. Add the lime zest and juice. Add the kosher salt, red pepper flakes, minced garlic and mash. Add cilantro and mix into the guac.

If you are making this a couple of hours early, take all the seeds I mentioned to save and lay them over the top of the guacamole (this will prevent your guac from becoming brown before serving). Place plastic wrap over the guac, making sure to lay it directly on top of the guac and seeds, with no air caught in between the plastic and guac. Put in your refrigerator until ready to serve.

Serve this amazing guac with chips or you favorite cut veggies and you have a fantastic appetizer. This is also good as a topper for tacos, burritos, tostadas, etc. You name it. It’s so good, you can eat off a spoon by itself and you’ll love it.

Ingredients

5 large avocados
2 limes, zest and juice
1-1/2 teaspoons kosher salt
1/4 teaspoon red pepper flakes
3 large garlic cloves, minced
2 tablespoons minced cilantro

Directions

  1. Cut avocados in half. Remove seed and remove avocado from shell. Cut into large chunks. Place into a bowl.
  2. Add the lime zest and juice.
  3. Add salt, red pepper flakes, garlic and mash.
  4. Add cilantro and mix into guacamole.
  5. Serve with chips.
