
Happy Super Bowl LIX!
I’m getting ready to host our friends and our daughter for Super Bowl Sunday. Our son-in-law has to work today, but I’m ready to load our daughter up with lots of goodies to take home to him so he doesn’t feel left out.
I just prepared the guacamole and I swear, every time I make it, it seems to taste better. I have a couple versions of guacamole in my blog and this one is my newest. I love jalapeños, but decided not to add them this time, only because I’m serving jalapeño poppers (lots of them!) as well and I thought I’d leave them out. When I tried it, it didn’t taste like anything was missing, it’s just as good as my guac with the jalapeños.
I started by halving my avocados and placing them in a large bowl. I set aside some of the pits to use if I have leftover guac. Unlikely, but possible. If I do have leftovers, I place the pits on top of the guac and cover it tightly. This helps to keep my guacamole from turning brown the next day.
Once I had all 9 of the avocados in my bowl, I added the kosher salt, cumin and red pepper flakes. I then added the zest of two of the limes and the juice of all three. Next, I added the garlic and onion and mashed everything together with a potato masher. I then added the cilantro and gently folded it in. Once you have the guacamole mixed, place in a serving bowl, serve with tortilla chips and enjoy.



Ingredients
- 9 avocados
- 2 teaspoons kosher salt
- 1-1/4 teaspoons cumin
- 1/2 teaspoons red pepper flakes
- 4 cloves garlic, minced
- 3 limes, juice of all 3, zest of 2
- 1/3 cup red onion, diced
- 1/3 cup cilantro, chopped
Directions
- Remove avocado from its shell and place in a bowl.
- Add salt, cumin and red pepper flakes to halved avocados.
- Next, add the lime zest and lime juice.
- Add garlic and onions. Mash together using a potato masher. Add cilantro and gently fold in.
- Place in a bowl and serve with tortilla chips.
