Grilled Havarti, Green Chile and Apple Sandwich

Wondering what to make for lunch today, I decided on a grilled Havarti sandwich. To the Havarti, I chose to add diced green chiles and a quarter of a sliced apple. I love to add an apple to my sandwich … something about that added crunch just does it for me. The diced green chiles made me think of a quesadilla.

I used the light Havarti cheese from Trader Joe’s and for the butter on the outside of my bread, I always use Smart Balance, with less fat and cholesterol. Feel free to use Havarti that is not light and regular butter if that is what you prefer. My favorite apple is a red delicious, so that’s what I cut up to use in my grilled cheese.

Now that lunch is out of the way, I can continue on with my chores around the house. I think the ironing is calling my name.

Ingredients

2 slices whole grain bread
2 slices light Havarti cheese
1/4 red delicious apple, sliced
2 tablespoons diced green chiles.
1 tablespoon Smart Balance Butter

Directions

  1. Butter the outside of each slice of bread. Place one slice, buttered side down into a small skillet, sprayed with non-stick cooking spray.
  2. Place one slice of cheese on the bottom slice of bead, add the apple slices and green chiles. Top with the second slice of cheese and the other slice of bread, butter side up.
  3. Grill on medium high for a couple minutes per side, until the bread is nice and golden.
