Ground Beef and Corn Tacos

It’s Tuesday and we all know what that means … Taco Tuesday! I actually made these tacos last week using ground turkey, but wanted to try my spice mixture on lean ground beef and see which one I liked better. Normally, I’m a ground turkey girl, but I have to say I loved this seasoning even more on the ground beef.

My recipe calls for two pounds of lean (93% lean) ground beef because I wanted to make enough for leftovers. However, if you have more than three people in your family (which is what I have), you could probably make this for a meal for a family of 6.

For the spice mixture, I added kosher salt, pepper, chili powder, oregano, garlic powder, onion powder, dried orange peel and brown sugar into a small bowl. I heated two tablespoons olive oil in a large skillet before adding the ground beef. Once I added the beef to the pan, I poured the seasonings over the meat. I also added the zest of 3 limes and the juice of 4 limes to the meat and seasonings. My limes were not quite as juicy as others I’ve picked up recently, which is why I added the juice of an extra lime. The zest of three was perfect, but if you’d like to add the zest of that fourth lime, go right ahead, it will only enhance the flavor.

While the meat was browning, I was cooking three cobs of corn to add to the meat mixture. Once the meat was sufficiently browned and crumbly, I added the kernels of those cobs to the meat and mixed everything together.

Once the corn and meat were mixed together, my tacos were ready to be served. I chose cherry tomatoes, avocado, pepper jack cheese, red onion, and sour cream as the toppings for our tacos tonight.

I heated corn tortillas on the cook top, as I always do. I love the little charred marks I get from heating them over the gas burner.

I’m already looking forward to lunch tomorrow!

Ingredients

2 pounds lean ground beef
2 tablespoons olive oil
1-1/2 teaspoons kosher salt
3/4 teaspoon pepper
2 teaspoons chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
2 teaspoons dried orange peel
2 tablespoons brown sugar
zest of 3 limes
juice of 4 limes

Directions

  1. In a small dish, mix kosher salt, pepper, chili powder, garlic powder, onion powder, orange peel, and brown sugar. Set aside. Zest 3 limes.
  2. Heat oil in large skillet. Add beef and seasonings, as well as lime zest and the juice of the limes. Cook until brown and crumbly.
  3. Heat tortillas and prepare toppings.
  4. Build tacos and enjoy.
