Carmel Sea Salt Crispy Cookies

Last weekend, Dennis and I were grocery shopping and we picked up a small package of cookies sold in their bakery department. These cookies were so yummy, I couldn’t wait to surprise my husband and try to make these cookies for him. These are no bake cookies, which is right up my alley.

I already had corn flakes in my pantry and sea salt in my spice cabinet. I would only need caramels and heavy cream to complete my ingredient list, so today while I was doing my weekly grocery shopping, I picked those items up. I had been planning to make these cookies today, knowing we’d be spending our afternoon at home watching the Green Bay Packer playoff game. While we were watching the game, I read a few chapters of a book I’ve been devouring – so nice to be able to do on a Saturday instead of errands – and then headed to the kitchen to surprise Dennis with my little cookie treat.

For this recipe, you will need three 4-1/2 ounce packages of soft caramels, 3 tablespoons of heavy cream, 2 cups of corn flake cereal, and sea salt. There are not many ingredients needed for this recipe, which means it will fall nicely into my sister’s requirement of a recipe that doesn’t have a long ingredient list.

Ingredients

I started by unwrapping my caramels and placing them into a medium size saucepan. To the caramels, I added 3 tablespoons of heavy cream.

I actually forgot to take a picture of the caramels once they were completely melted, but you’ll know when they are.

I melted the caramels over medium-low heat for about 8 minutes, until the caramels were completely melted and smooth. Once the caramels were melted, I added the corn flakes into the melted caramel and stirred gently, making sure to coat all the cereal.

Once the cereal was coated, I used a large spoon to transfer the the cookies onto a parchment lined baking sheet.

I then put the tray into the refrigerator for a couple hours so the cookies would set.

This recipe made 18 cookies.

My husband absolutely loved these cookies! They were so easy to make, yet would make a wonderful dessert for company with a small dish of vanilla ice cream, yum!

Ingredients

  • 3 4-1/2 ounce packages of caramels
  • 3 tablespoons heavy cream
  • 2 cups corn flakes
  • sea salt

Directions

  1. Remove caramels from wrappers and place in a medium saucepan. Add heavy cream and cook over medium-low until caramels are melted (8-10 minutes).
  2. Drop cookies by spoon onto a parchment lined baking sheet and sprinkle with sea salt.
  3. Place in refrigerator until cookies are set, about an hour.
